In Cantina Sava have selected the oldest primitivo saplings and, bunch by bunch, all our grapes are handpicked and brought intact and healthy to the cellar; where they are then handed over to expert winemakers, in charge of the scrupulous vinification and aging and prepare it for a long bottle life. The strength of these wines comes from the ability to dose the three main ingredients of the Salento wine tradition: Sun, sea and passion.

Ruby red with purple at the edge.</p>
<p><strong>NOSE</strong><br />
Intense bouquet with hints of cherries and blackberries, soaked in minty tobacco, slightly spicy.</p>
<p><strong>PALATE</strong><br />
The spicy taste makes this wine sweet to the mouth, finishing with notes of cocoa and coffee. Persistent wine, it will continue to evolve through the whole bottle.</p>
<p><strong>AGEING</strong><br />
Ageing in a mix of American and French oak barriques for 12 months.</p>
<p><strong>PAIRING</strong><br />
It pairs well with risottos, slow-cooked lamb, pappardelle with boar ragout, red meats, lamb and savory aged cheeses.</p>

Intense, complex, fruity aroma, with notes of small red fruits (cherries &amp; blackberries).</p>

Velvety and soft texture, warm and quite tannic, with a great taste olfactory persistence.</p>
<p><strong>AGEING</strong><br />
De-stemming and crushing of the grapes, maceration at a controlled temperature for 8-10 days with regular pumping overs.</p>
<p><strong>PAIRING</strong><br />
It goes particularly well with first courses based on tasty sauces like pasta with ragù, meat ravioli, red meat (roasts, grilled meat and game) and seasoned cheese.</p>

Alcohol 14%</p>
<p><strong>APPEARANCE</strong><br />
A dark ruby core accompanied by delicate, bright purple flashes along the glass rim.</p>
<p><strong>NOSE</strong><br />
Focused on small black-skinned fruits, it bursts with intense aromas of blackcurrant, wild blackberries, and a heavy dose of Mediterranean spices (thyme &amp; rosemary).</p>
<p><strong>PALATE</strong><br />
Medium-to-full body with a velvety and perfectly balanced texture. It provides a nice contrast between a warming alcoholic sensation and a mouth-cleansing freshness.</p>
<p><strong>AGEING</strong><br />
The wine is aged for 4 to 5 months in used French and American oak barriques.</p>
<p><strong>PAIRING</strong><br />
Outstanding when paired with lasagna, baked ravioli, pasta with wild boar or spicy fennel sausage. At its best also with grilled pork chops, lamb and medium-aged cheeses.</p>

Intense ruby color with violet reflections.</p>
<p><strong>NOSE</strong><br />
An aromatic bouquet loaded with ripe raspberries, dark plums, black fruits, and Mediterranean spices, backed by subtle undercurrents of smoky tobacco, cedar wood and dark cocoa.</p>
<p><strong>PALATE</strong><br />
A full-bodied wine, round and incredibly smooth. It leans into a soft, velvety texture where the high sugar concentration masks very well the alcohol heat.</p>
<p><strong>AGEING</strong><br />
Maceration at controlled temperature for 8-10 days with regular pumping overs.</p>
