Jean Pabiot et Fils Kimeridé Pouilly-Fumé

Son and grandson of Jean Pabiot, Alain and Jérôme manage the Domaine des Fines Caillottes within the Pouilly-Fumé appellation. The terroirs, mainly clay limestone, are therefore very varied: white limestone pebbles known as “caillottes”, marl with small fossilized oysters (kimmeridgian) and flint. This diversity of terroirs gives the estate’s wines their aromatic complexity.
“Kiméride” comes from Kimmeridgien, time of the geological formation of this terroir. This cuvée, produced only with the best vintages, is a plot selection of this Kimmeridgian limestone terroir, with fossils (ammonites, small oysters, etc.).

TECHNICAL DATA

APPEARANCE
Intense straw yellow.

NOSE
An outsanding olfactory compexity: floral notes (honysuckle, acacia) are followed by honeyed nuances on a chalky and lemony background.

PALATE
Ample and dense, the mouth unfolds in roundness and softness.
Its long finish confirms the finesse of this aromatic and elegant wine.

AGEING
Partial skin contact maceration, maturing on fine lees, with stirring of these lees for several months, in stainless steel tanks and finally bottling after 2 years of maturing.

PAIRING
Fully appreciated as an aperitif, it goes wonderfully with crustaceans, fish, poultry, rabbit, veal, stew and tender cheeses.

READINESS FOR DRINKING
Ready to drink upon purchase, it can easily be stored for 7-8 years.
